New Zealand “Kiwi” Burger with Beetroot and Fried Egg

Why you should try it

While I was traveling New Zealand I started to love this version of a burger, which is often served with this specific combination of ingredients. The incorporation of beetroot and a fried egg on a burger adds a delightful blend of earthy sweetness from the beetroot and rich creaminess from the egg, creating a unique and delicious flavor profile.

Ingredients

"Kiwi" Burger

  • 2 burger buns
  • 2 premade vegetarian patties of your choice
  • 2 eggs
  • 100 g beetroot
  • 2 slices of cheese
  • 1 large tomato
  • 1 red onion
  • a few slices of lettuce
  • mustard
  • ketchup

Fries

  • 500 g potatoes
  • 1 tablespoon sweet paprika

Instructions

  • Prepare fries. Set oven to 220°C (428°F). Peel potatoes and cut them into 1,5 cm large fries. Put the fries on a baking tray with some parchment paper. Drizzle a good amount of olive oil on top. Add salt, pepper and sweet paprika and spread everything evenly on the potatoes using your hands. Bake for about 20 minutes until golden brown.
  • Cut all veggies. Cut totomato in slices, cut the lettuce roughly to the size of the burger. Slice onion and beetroot.
  • Fry patties and onion. Add some oil to a large pan on high heat and fry the patties as well as the onion rings. When onions turn brown, remove them from the pan. Just before the patty is cooked from both sides, add a slice of cheese on top so that it melts. Once everything is cooked use the remaining oil in the pan to quickly toast the burger buns from both sides. Add oil if there's nothing left.
  • Fry egg. Fry the egg in a seperate pan with some oil and salt and pepper.
  • Assemble & serve. Spread some ketchup and mustard on both sides of the bun and spread with a knife. Layer with lettuce, tomatoes, beetroot, patty, onion and egg. Enjoy the fries along with some ketchup as well. Enjoy!

    Really delicious burger.
    It even cured my back pain and now I can play ping pong again.
