Ingredients

  • 650 g potatoes
  • 400 g broccoli
  • 1 red pepper
  • 3 spring onions
  • 8 large eggs
  • 50 g cheddar cheese
  • olive oil

Optional (topping)

  • 100 g arugula

Instructions

  • Fry potatoes. Peel potatoes and cut them into 1-2 cm dice. Fry them in a large pan with some olive oil.
  • Cut and fry remaining veggies. While the potatoes are frying, slice spring onions, leaving out the dark green part, and add to the pan. Chop the stalk of the broccoli into the pan (remove the tough end first and peel the sides). Also, slice pepper and add to pan.
  • Season and fry. First, set the oven to 200°C/392°F. Season the vegetables with salt and pepper and let everything cook for about 15 minutes while stirring occasionally. Cut the head of the broccoli into small chunks and add them to the pan during the last 5 minutes of cooking.
  • Add egg. In a large bowl, add the eggs, cheddar and season with salt and pepper. Mix well and add to the pan. The mixture should cover the whole ground of the pan.
  • Simmer and bake. Let everything cook for a few minutes and then bake in the oven for 10 minutes. Everything should be golden brown once you take the frittata out of the oven. If you like, put some extra cheddar on top.
  • Serve. Cut frittata into pizza slices and use some fresh arugula as an optional topping. Enjoy!
