Ingredients

  • 6 large tortilla wraps
  • 200 g rice
  • 150 g plain yoghurt

Guacamole

  • 2 avocados
  • 1 garlic clove
  • 2 tablespoons cream cheese
  • fresh coriander

Salsa

  • 3 large tomatoes
  • a few pickled jalapenos
  • fresh coriander
  • 1 lime

Black Beans Filling

  • 1 tin black beans
  • 1 onion
  • 3 garlic cloves
  • 1 green chili
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin

Instructions

  • Cook rice. Cook rice according to package instruction.
  • Prepare Guacamole. Take out the flesh of the avocado and put it in a small bowl. Peel and finely mince the garlic. Cut lime in half and add a big squirt. Add cream cheese and season with salt and pepper. Mash everything with a fork until silky smooth ;).
  • Prepare black beans filling. Peel onion and finely dice. Put the onion and some olive oil in a medium size pan and fry for about 4 minutes. While frying, peel and finely mince garlic. Mince the chili, too. Once onion is properly fried, add the garlic and chilli and fry for another 1-2 minutes. Rinse the black beans and add to the pan. Stir in the cumin and tomato paste, season with salt and pepper and let it cook for about 5 minutes. Take off the heat.
  • Prepare salsa. Finely dice tomatoes and put in a bowl along with small slices of the jalapenos. The more you take, the spicier it gets – it's up to you! Wash and chop fresh coriander and add along with salt and pepper to taste to the bowl.
