Ingredients

  • 500 g sweet potato gnocchi (normal ones work, too)
  • 700 g large tomatoes
  • 4 garlic cloves
  • 150 g Crème fraiche
  • 2 tsp chili flakes
  • parmesan cheese (topping)
  • fresh basil (topping)

Instructions

  • Prepare vegetables and bake. Cut tomatoes in half, peel the garlic. In a casserole dish, add the tomatoes, garlic and crème fraiche. Add some salt and pepper as well as a good dash of olive oil. Mix well and put into the oven for 25 minutes at 200°C (392°F).
  • Fry gnocchis. After 20 minutes of baking, put some olive oil in a large pan and fry gnocchis for about 5 minutes until golden brown. Remove the pan from the heat briefly and prepare the sauce.
  • Make sauce. Take the casserole dish out of the oven and put its contents in a blender. Mix until you've reached a creamy texture. Pour the sauce over the gnocchi in the pan. Cook everything on low heat for another 5 minutes.
  • Prepare toppings and serve. Divide the tomato gnocchis evenly onto the plates and top off with fresh basil and grated parmesan cheese. Enjoy!
