Ingredients

Gnocchi pan

  • 500 g gnocchi
  • 2 large tomatoes
  • 1 red onion
  • 1 tablespoon balsamic vinegar
  • fresh parmesan cheese as garnish

Marinated mozzarella

  • 125 g mozzarella
  • 20 g fresh basil
  • 1/2 garlic clove
  • 2 tablespoons olive oil
  • salt and pepper

Instructions

  • Marinate mozzarella. Wash basil and peel garlic. In a high mixing bowl, add the basil, garlic, olive oil as well as salt and pepper. Use hand mixer to create a nice pesto. Cut mozzarella in thick slices and marinate with the pesto in a small bowl. Set aside.
  • Caramellize onions. Peel onion and cut in 4 quarters. In a small pot, add a dash of olive oil and braise onions for 2 minutes. Then, add a teaspoon of sugar, stir well and braise for another 2 minutes while stirring every now and then. Deglaze with 50ml water and balsamic vinegar. Let it simmer until the fluid has evaporated, then set aside.
  • Gnocchi pan. In a large pan, heat up a dash of olive oil and fry the gnocchi for about 5 minutes. Meanwhile, wash and dice the tomatoes. Add them to the gnocchis and fry for another 4 minutes. Stir occasionally. When done, mix in the caramellized onions and add salt and pepper to taste.
  • Serve. Arrange the gnocchi mix on the plates, put the marinated mozzarella on top and garnish with fresh parmesan cheese. Enjoy!
