Why you should try it

These wraps will definetely make you want more. The flavor is created by the salsa as well as the baked sweet potato and cheese. The baking process brings out the aroma of these ingredients, who doesn’t love melted cheese? As a little surprise, the tortilla chips along with the soft ingredients provide a pleasant texture.

Ingredients

  • 6 tortilla wraps
  • 800 g sweet potato
  • 200 g shepherd's cheese
  • 350 g tomatoes
  • 1 red onion
  • 1 avocado
  • 200 g greek yoghurt
  • 1 lime
  • sriracha sauce
  • 2 teaspoon paprika powder
  • 1 bunch of fresh parsley

Optional

  • 50 g tortilla chips

Instructions

  • Bake potato. Set oven to 220 °C (428 °F). Peel and wash sweet potatoes and dice them into 1 cm cubes.  Season with enough olive oil salt, pepper and paprika powder and mix everything together with your hands. On a baking parchment, spread the potatoes on a baking tray and let it bake until soft (~20 min). After the first 15 minutes, add the shepherd’s cheese (see step 3 for preparation).
  • Prepare salsa. While the potatoes are in the oven, prepare the salsa. Dice tomatoes and onion in small cubes. Add 3 tbsp. of olive oil and squeeze in the juice of half a lime. Wash and finely chop the parsley and add to the salsa. Season with salt and pepper and stir.
  • Bake cheese. Cut the shepherd’s cheese into larger blocks, about 2×1 cm. Season with 2 tsp. of sweet paprika powder and 1 tbsp. of olive oil. Add them to the baking tray and let it bake along with the potatoes for 5 minutes or until the cheese starts to melt and the potatoes are done.
  • Assemble & Serve. Cut the avocado in thin slices. Take the baking tray out of the oven. If desired, shortly heat up your wrap in the microwave or from the remaining heat of the oven. Put the wrap on the plate and start to spred sweet potatoes and cheese. Add the salsa, avocado, a few dabs of yoghurt and sriracha sauce at the end. If desired (really tasty!), crunch up some tortilla chips and add them to your wrap for extra crispiness. Roll up the wrap and enjoy!
