Why you should try it
This dish is super simple and very time efficient. The spiciness originates from the indoesian sambal oelek sauce. However, it’s not only spicy but also slightly acidic and goes along perfectly with the peanut butter and cumin. Don’t hesitate buying it, since you can store it in your fridge and will last forever.
Ingredients
- 250 g basmati rice
- 400 g kidney beans
- 6 fresh tomatoes
- 2 onions
- 3 big garlic cloves
- 1 tablespoon peanut butter
- 2 teaspoons sambal oelek
- 1 teaspoon cumin
- fresh parsley
Instructions
- Cook rice and prepare vegetables. Cook rice according to the package instructions. Wash tomatoes and cut into rather large cubes. Peel and dice the onions and garlic.
- Fry ingredients. Add 1 tablespoon of olive oil to a pan and sauté onions until translucent. Add the garlic and fry for another 1-2 minutes. Then, add the tomatoes and let it simmer for about 5 minutes on low heat with the lid on.
- Add spices and kidney beans. Add the cumin, sambal oelek, peanut butter and kidney beans. Stir well and let it cook for another 3 minutes. Add salt to taste.
- Assemble & serve. Wash and coarsely chop the parsley. Serve rice along with the beans and garnish with parsley. Enjoy!
