Why you should try it
Stuffed bread is always great. This recipe is prepared very quickly. It tastes fresh and is great to enjoy during summer. Simple and filling, that’s how I like it!

Ingredients
Pita & Filling
- 4 pita breads
- 200 g halloumi
- 0,5 cucumber
- 1 large tomato
- 1 red onion
- 2 tablespoons fresh chopped mint
Hummus
- 1 tin chickpeas (1 tin = 265 g drained net weight)
- 1 tablespoon tahini (sesame paste)
- 0,5 teaspoon cumin
- 1 tablespoon lemon juice
- 4 tablespoons water
Instructions
- Hummus. Rinse off chickpeas and add to a bowl along with the lemon juice, tahini, cumin and a dash of olive oil. Puree everything with the hand blender and add salt and pepper to taste. If you want it to be creamier, just add a little more water.
- Vegetables. Cut onion in fine rings, wash and chop tomato and cucumber into small cubes. Mix everything in a bowl along with the chopped mint and add salt and pepper to taste.
- Halloumi. Heat up a pan with some olive oil. Cut the haloumi lengthwise into slices. Fry the cheese for 1-2 minutes each side until the cheese has turned golden. Toast the pita bread in the oven, toaster or pan.
- Put together. Cut open the pita bread and spread hummus on both sides. Fill with halloumi and salad. Enjoy! If there's some hummus remaining, you can enjoy it along with some more vegetables.
