Why you should try it

This dish is absolutely packed with proteins. Vegan meat, beans, beans and beans. It has a very hearty, cosy feeling eating this dish. However, the avocado and yoghurt still makes it taste fresh at the same time. I definitely recommend that you eat it with bread!

Ingredients

Main components

  • 180 g vegan ground beef
  • 400 g large white beans
  • 400 g kidney beans
  • 1 avocado
  • 1 onion
  • 1 red chili
  • 1 garlic clove
  • 400 g canned tomatoes
  • 400 ml vegetable broth
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 200 g yoghurt
  • bunch of fresh parsley or coriander

Optional

  • 1 loaf of bread

Instructions

  • Cut onion, garlic and chili. Fry them and meat. Dice onion and mince garlic. In a large pot, heat up 2 tablespoon of olive oil. Start frying the onion and the vegan meat. Add the garlic and chili after a few minutes. Fry again for about 1-2 minutes. Add the tomato paste and fry for another 1-2 minutes.
  • Add liquids and beans. Add the tomatoes, kidney beans, white beans and vegetable broth. Also, put in the paprika and cumin. Stir thoroughly and let it simmer on low heat for about 15 minutes.
  • Assemble & Serve. Stir in salt and pepper to taste. Serve with a dab of yoghurt and fresh herbs on top. Cut avocado in half, remove stone and remove the flesh with a spoon – put on top as well. Enjoy!
