Why you should try it
Sweet potatoes, black beans and quinoa – the ultimate stomach filler combo! Believe it or not, there’s also chocolate in this recipe! Interestingly, you actually can’t really tell by the taste of it. It tastes somewhat sweet and a little richer, but either way definitely delicous. Convince yourself!
Ingredients
- 150 g quinoa
- 500 g sweet potatoes
- 2 tins black beans (1 tin = 240g drained weight)
- 2 onions
- 3 garlic cloves
- 550 ml vegetable broth
- 2 tins canned tomatoes
- 1 red chili
- 20 g dark chocolate (70% cocoa)
- 2 teaspoons cayenne pepper
- 2 teaspoons cumin
- 1 teaspoon cinnamon
- 2 teaspoons dried oregano
- fresh coriander
Instructions
- Bake sweet potatoes. Heat up to oven to 220°C (428°F) top and bottom heat. Peel and chop sweet potatoes into 2 cm cubes. Lay them out on a baking tray covered with a baking paper, season with about 2 tablespoons of oil and half of the cumin as well as cayenne pepper. Put in the oven and set a timer for 25 minutes – the potatoes should have turned soft by then.
- Fry onion, garlic and chili. Finely chop onions, garlic and chili. Heat up some oil in a large pan, add onion and fry until translucent. Add garlic and chili (seeds, too!) and fry for another minute. Add cayenne pepper and cumin and fry for yet another minute.
- Add liquid and additional ingredients. Take beans out of the can and rinse in a colander. Add vegetable broth, canned tomatoes, cinnamon, dried oregano, beans and some salt to the chili. Stir well and let it simmer for about 20 minutes without a lid. Stir every now and then.
- Make Quinoa. While the chili is simmering, prepare the quinoa in a seperate pot. Cook according to package instructions; wash it beforehand.
- Add chocolate. Break chocolate into small pieces and let it melt in the chili. Stir well.
- Assemble & Serve. Add some more salt to taste for the chili. Then, put quinoa, chili on a plate and add sweet potatoes on top. Wash coriander and garnish. Enjoy!
