Why you should try it
Lentils with a fruity touch! Lemon zest and juice go along well with the sweet dried apricot. It’s a perfect dish for a quick and easy meal but yet still contains a lot of flavor. Goes along well with Naan-bread or some pita bread.
Ingredients
- 300 g red lentils
- 150 g dried apricots
- 400 g zucchini
- 2 onions
- 8 g ginger
- 3 garlic cloves
- 1 lemon
- 800 ml vegetable broth
- 4 teaspoons sugar
- 6 teaspoons curry powder
- 200 g yoghurt
Optional
- fresh naan or pita bread
Instructions
- Prepare vegetables and roast zucchini. Peel and finely dice the ginger, onion and garlic. Coarsely dice the zucchini as well as the dried apricot. Heat up about 2 tablespoons of butter in a pot and roast the zucchini for a few minutes until some parts of the flesh turn golden brown. Take them out and set aside.
- Add to the pan. Add onion, apricots, garlic and ginger to the pot and sauté briefly. Add sugar, curry powder and lentils and fry briefly, too. Pour in vegetable broth, bring to a boil and simmer covered over low to medium heat for about 10 minutes, stirring occasionally.
- Season and add zucchini. Grate half of the lemon's zest into the pot. Also, add the zucchini back in. Season dal with salt and lemon juice. Divide among bowls or deep plates and garnish each with 1 blob of yogurt. Enjoy!
